How do I talk about strengths without sounding like I am overcompensating for my challenges?

Use evidence, not hype. Instead of saying 'ADHD is my superpower,' try: 'I am strong at fast pattern recognition and creative problem solving, and I use written systems to manage follow-through.' That keeps the whole picture honest: strengths plus supports. People tend to trust that more than a polished performance.
